Biography and Expertise

My career in hospitality began as a young Chef at the distinguished 4-Star Cavendish Hotel in London, England. I was later selected as one of two Chefs on a private yacht, where I spent two years traveling to 19 countries and immersing myself in diverse cultures and cuisines. Following this international experience, I moved to the United States to continue my career in hotels and restaurants, serving both as a Chef and as a Multi-Unit Restaurant General Manager.

In 2005, I transitioned into academia as an Associate Professor of Hospitality, Food and Beverage (with a focus on wines and spirits), and Business Management at Valencia College in Orlando. My academic contributions expanded in 2013 when I joined Johnson & Wales University in the College of Professional Studies, where I continue to teach in the M.B.A. program and undergraduate courses in hospitality, culinary arts, and food technology/food security. That same year, I was invited by the New England Culinary Institute (NECI) to design and deliver advanced Food and Wine Pairing courses for their F&B Management programs, a role I held until 2020. In 2014, I began teaching at the University of Central Florida/Rosen College of Hospitality Management.

I hold two master’s degrees: one in Intercultural Studies and another in Hospitality and Tourism Management. In addition, I have earned the Certified Hospitality Educator (CHE) designation from the American Hotel & Lodging Educational Institute. This October, I will begin certification as a Culinary Medicine Professional through the American College of Culinary Medicine, a program designed to bridge healthcare and culinary practices by reshaping conversations about food and health between professionals and patients.
