Biography and Expertise

John Maas began his professional career after earning a bachelor’s degree in accounting from Loyola University Maryland. He joined the tax division of Arthur Andersen & Co., where he earned his CPA certification and Maryland licensure. Maas later served as chief financial officer of an electronics manufacturing company with operations in Baltimore, Maryland, and Puerto Rico.

In 1992, driven by a passion for baking and pastry, Maas combined his financial and manufacturing experience with formal culinary training by enrolling at Baltimore International College. He earned an associate degree in professional baking and pastry in 1993. Following graduation, he founded a successful wholesale pastry business in Baltimore, supplying restaurants, caterers, corporate clients, and private customers. Among his notable accomplishments, Maas created a cake for Pope John Paul II during the Pope’s visit to Baltimore.
After selling his business in 1998, Maas transitioned into higher education, teaching at Scottsdale Community College and Baltimore International College. In 2001, he joined Princeton University as executive pastry chef and bakeshop manager, overseeing production for residential dining, catering, and retail operations.
Maas joined the faculty at Johnson & Wales University in 2006. While at JWU, he earned a master’s degree in hospitality administration from University of Nevada, Las Vegas and has continued to maintain an active CPA license in the State of North Carolina.
